El siguiente trabajo recopila la información sobre la tercera edición del Gastrochallenge del colegio de Arte Culinario y Hospitalidad de la Universidad San Francisco de Quito. Este estudio resume la investigación realizada para la propuesta del concepto gastronómico del restaurante “Greek Taberna Griega”, su menú, la planificación, y la ejecución del proyecto, así como también la información financiera obtenida desde el inicio hasta su cierre. |
